Our family LOVES meatballs.
So Chef Darcy is going to share with you our favorite way to make meatballs. First, you absolutely must wear an adorable apron and hat {many thanks to grandma pace}!
We like to add a few veggies to our meatballs.
Helps keep them moist and mom feels like it might be a little healthier.
Finely diced carrots, onions and roasted red peppers will do.
{A friend of mine shared this tip: grate the onion and carrot for quick prep}
In a large bowl add 1 pound of ground beef, veal, turkey, chicken or mix and match
whatever floats your boat!
I make these meatballs with ground turkey all the time and they are delish!
Add 1 medium onion chopped fine.
Add 1 small carrot chopped fine.
Add 2 Tbsp roasted red pepper chopped fine.
Add 1 Tbsp of minced garlic. I add more because I LOVE garlic!
Add 1/2 cup of bread crumbs and 1/2 cup of grated parmesan cheese.
{NOT the Kraft kind get the real stuff!}
1 tsp salt and 1 tsp black pepper
sometimes I add 1 tsp of ground cumin or a pinch of red pepper flakes
{doesn't have to be exact}
1 egg
Then use a cooks best tool {her hands} and mix well!
Now we like the small ice cream scoop so that the meatball are all the same size
but you can definitely just make little balls with your hands
{about the size of a golf ball}
Put a little bit of olive oil in the pan. You don't need much!
Bake at 400 degrees for 30 minutes.
To make it easy on myself I use a jar of spaghetti sauce
{only for meatballs never on my spaghetti}
and let them simmer until hot.
We like to eat our meatballs in a sandwich.
I like to use crusty french bread but rolls work too.
Everyone loves a meatball!!!

You are such a good woman for many reasons. One of them being, you make home made meatballs! i buy mine frozen from costco...maybe one day ill be able to make things from scratch! The girls look cute as always.

I love the play by play for meatballs. They sounds so yummy!! Matt is not a meatball guy unfortunately so I don't make them hardly ever. I love the apron and hat and such a cute model too.

Do you get the roasted peppers from the store or do you actually roast them yourself?

Oh we love them on sandwiches too. Toast a little provolone and we're set! I need to try the peppers and carrots. And hello?? I have a scoop like that and have never used it for the meatballs! Thanks for the inspiration, we're having meatballs on Sunday!
